Tasting Note: This incredibly creamy and mild cheese has the sweetness of Brie and sharpness of Gorgonzola. It carries the rich chocolatey flavor of Harmony 65% beautifully.

Food for Thought: Cambozola was only recently created in the 1980s by a German cheese producer who may have been aiming to make a hybrid between Camembert and Gorgonzola (hence the name). The extra cream in this cheese smooths out harsher flavors, like the strength of blue veins in cheese or the bitterness of cacao.
