Wensleydale with Dried Fruit and Harmony
Remember cake pops? That soft, delicious blend of cream cheese and chocolate rolled in sprinkles? Well this is better. Not only does it taste more like real and flavorful food, but it’s better for you. We enjoyed a supple Wensleydale with dried cranberries alongside Harmony 80%, making a very pretty looking and sophisticated dessert.
Tasting Note: This pair manages to be both rich and tart and strikes a perfect sweet and salty balance. It is reminiscent of a dark chocolate cheesecake with a cookie crust and generous drizzle of fruity sauce.
Make it an Occasion: I quite enjoy this pair to accompany my tea breaks. If you want something a bit more filling, smear some of the cheese on your favorite bread and put cacao beans on top. Or equally quick and easy, make a pretty board arrangement of cheese, cacao beans, fresh fruit, and nuts galore. Unroasted and unsalted nuts are best as this pairing is rich as it is; almonds, pecans, walnuts, hazelnuts, and brazil nuts are all lovely!
Equally Great Pairing: Pair this with Love and you might have visions of poached fruit in warm spices, or a warm piece of buttered toast with almond butter and jam.
Food for Thought: Tea is often overlooked when it comes to food and beverage pairings, but there is a lot more to discover about your cacao and cheese with a warm cup of tea. Keep in mind that just like you need good cacao or cheese to have a stimulating flavor experience, it is also important to have a good quality tea (herbal or regular) to pair with!
