Food for Thought: Parmigiano-Reggiano is not the same as Parmesan. This unique stamp identifies not only the origin from which it came, but also that it contains no additives, is fully traceable, from specified regions in Italy, and aged for at least 12 months. Even the size of the wheel is specified! The original will always bear the “Parmigiano-Reggiano” mark on the outer wheel.
