Peppercorn Cheese with Joy
Bold peppercorns in this creamy cheese are accented perfectly by Joy’s crunchy texture and herb notes.
Tasting Notes: We love this incredible Seattle Made combination. Back in 2016, we met with Beecher’s Handmade Cheese to pair cacao beans and cheese and this was one of our favorites! The umami notes of the cheese make Joy taste sweeter than when it’s alone.
Food for Thought: In pairing, there are two leading approaches. 1. Similar textures or flavors. 2. Contrasting, yet complementary textures and flavors. The latter is harder, but often far more rewarding. In our opinion, “opposites attract” should not apply to marriages alone.
What makes the black peppercorns so irresistible in Beecher’s creamy Flagship cow’s milk cheese is the contrast of texture (crunchy vs. creamy) and flavor (spicy vs. mild). The same is true when you add Joy Snacking Cacao to the mix – lightly sweet and crunchy also contrasts with this creamy, umami cheese – while the milder mint & rosemary are accentuated by the cracked peppercorns.
